Pliek U, Tradional Cook From Aceh



Pliek U is made of dried residu of coconut oil. This is really tradional food from Aceh. It's hard to find in other place. The smell and the taste of pliek u is a little bit sour and smell very specific.


How to make it :
1). 200 gr pliek u
2). young jack fruit
3). young papaya
4). young melinjo seeds (Gnetum gnemon)
5). melinjo leaves, chopped eggplant
6). 100 grams of peanuts
7). 100 grams of shrimp (must be really clean so we can get healthy recipes)
8). 3 stalk lemon grass, chopped stem, crushed ends
9). 15 pieces of lime leaves, finely chopped
10). 5 cloves shallots, chopped.
11). 2 cm galangal, crushed
12). 4 cups coconut milk
13). 1 ounce green pepper, roughly chopped
14). salt (it will better if we use Jodium salt, so "healthy recipes" can be served for the whole family.

Spices:
1). 6 dried chillies
2). 3 red chillies
3). 5 chilies
4). 3 cloves garlic
5). 5 cloves shallots
6). 1 / 2 tsp cumin
7). 1 cm ginger
8). 2 cm turmeric
9). 1 tsp coriander

Directions:
1. Soak pliek u with hot water 10 minutes. Drain. Wash with cold water. Drain. Blend until smooth.
2. Heat the water. Enter pliek u and spices added with salt.
3. put melinjo inside.
4. put peanuts and shrimp inside.
5. put the coconut milk inside.
6. put the vegetables that have been cut into pieces (do not be too rough) and all materials also.
7. Cook it until done.
8. Eat with hot rice and fried dried salted fish

Rabbit Satay Recipe


 Rabbit meat now become familiar because from this meat we can make a healthy recipes.

How to Make Rabbit Satay :
Material:
1) 50 grams fried peanuts
2) 3 pieces or chili pepper according  to our taste.
3) 1 red chilli
4) Sugar  (according to our taste)
5) 75 cc of boiled water
6) 3 tablespoons soy sauce
7) 4 grains of red onion, thinly sliced
Make it sure that only be keeping everything clean can make a healthy recipes

Steps of preparation :

1) Separate rabbit meat from bones.
2) Cut according our prefered size, u sually  1 x 2 x 2 cm.
3) Stir fried pieces of meat with oil and spices that are mashed
then let stand for 15-30 minutes so the flavors will be absorbed
4) Next, puncture 3-4 pieces of meat on skewers each puncture.
5) Bake the skewers over hot coals until  satay is well cooked,
Do not forget to bake it at the bottom and up side of satay so it will not turn to black.
6) Sate is ready to serve with Satay Sauce on it,
then sprinkle the red onion slices on top of Satay sauce.
This satay will be more delicious when we eat it in hot.

After that, we must make Satay Sauce, which is made of  peanut sauce.

1) Crush fried peanuts, chili and red pepper until smooth.
2) Put  a little bit of  coconut sugar (brown sugar).
3) Thaw sauce with boiled water and then pour the soy sauce.
4) Stir the sauce until blended.
5) Ready to serve with rabbit satay

Escargot Satay


Materials :
500 grams of snail meat (we get it from 3 kg of fresh snails, they must be very cleaned)
25 bar of skewers

Seasonings:
1 / 4 kg of peanut
5 tablespoons of cooking oil
5 tablespoons of soy sauce
5 grains of red onion
5 grains of pepper
3 cloves of garlic
3 kaffir lime leaves
2 pieces of lemon
1 / 4 teaspoon of flavoring
Cayenne pepper, vinegar, salt to adjusted with your wish.

How to Make:
Snail meat that has been prepared  is sliced into two pieces,  puncture it with satay skewers .

Put it in a spice that has been crushed (garlic, pepper mix soy sauce and vinegar), then let stand for a while the spices are absorbed.

Make peanut sauce
fried peanut and grind it until smooth. Mix with garlic, salt, kaffir lime leaves, chili and flavorings that have been Grinded. Give a little water and boil until the oily and given a little soy sauce.

Bake until snail meat till it is done, then shower it with  peanut sauce, sprinkle with raw red onion and lemon slices.

And now, this satay is ready to be served for the whole family.
